Your restaurant on the banks of the Nive
Step through the doors of the Hôtel Le Bayonne: the Brasserie de la Nive is right there, just a few steps up. Although many Bayonne residents are still unaware of it, the restaurant is open to everyone – hotel guests and visitors alike.
It features a large hall lined with columns, a bar where you can enjoy a drink before sitting down to eat, and, above all, a terrace overlooking the River Nive and the swimming pool, set amidst lush greenery. The Lauga neighbourhood is quiet; Bayonne’s historic centre is a three-minute walk away.
The cuisine here is straightforward, seasonal and unpretentious. The menu changes every week depending on what’s in season, and everything is prepared on the premises by our head chef, Guillaume Deprade, and his team.
In the kitchen: Guillaume Deprade and his team
In the kitchen, chef Guillaume Deprade creates a new menu every week, based on the fresh produce that arrives. He is assisted by Éric Brendel, his sous-chef, and Christian Pourrut, a long-serving chef at the Brasserie.
The three of them stick to a simple philosophy: fresh, homemade ingredients, perfectly cooked dishes, and a Basque influence. The pastries are made on the premises and change throughout the year. A cheese from the Basque Country is always on the menu.
The Rossini burger, the restaurant’s signature dish
Puff pastry bun, pan-fried foie gras escalope, French beef steak, onion confit and piquillo pepper confit: the Rossini burger is the dish that regulars come back for.
The recipe of the week
Our menu is updated every week, depending on our chef’s inspiration, the season and the produce available from our local suppliers. It features an average of four to five starters and six to eight main courses, always including a signature burger. In summer, the menu is expanded to include large salads and a scoop of homemade ice cream.
Our producers and suppliers
At the Brasserie de la Nive, the menu changes every week as it depends on what’s in season. We prioritise French producers and suppliers, particularly those from the Basque Country! Examples include Aubard charcuterie, Ithurria honey, Bastidarra yoghurts, Haute Soule jams and Le Presseur du Pays Basque juices.
Highlights of the week
Lunch
Open from 12.00 pm to 2.00 pm, Monday to Friday. Quick set menus and a full à la carte menu, available indoors or on the terrace. The service is organised to cater for lunch breaks.
Dinner
Open from 7.00 pm to 9.30 pm, Monday to Thursday. A quieter atmosphere; the terrace is open in the warmer months.
The Snack Corner
At the hotel bar, a light set menu is available until 12 noon, featuring a delicious breakfast buffet.
Business meals, groups and seminars
The Brasserie de la Nive is naturally extending The seminar packages at the Hôtel Le Bayonne : 99 rooms and 9 flexible meeting rooms on the same site. Head chef Guillaume Deprade creates bespoke group menus, tailored to the event format and budget.
Its location also makes it a popular spot for business lunches; the Lauga neighbourhood is quiet and easily accessible, and the Jean Dauger Stadium is right on the doorstep, which means the Brasserie has a regular clientele of sportspeople and teams.
Our accommodation capacity
The restaurant can seat up to 90 people. By opening up the adjoining bar area, which has a further 30 seats, we can accommodate up to 120 people.
Groups are seated at large tables seating between 11 and 14 people. For a group lunch or dinner in a private setting, we would recommend one of our private dining rooms: the Garazi room or the Bayon suite. This ensures your group has its own dedicated space.
